Salmon Teriyaki Fried Rice.
Easy and delicious.
Serves 2-3.
Oven 200c fan forced.
In an oven proof dish, put in,
-250g salmon fillet,
-2cm sliced ginger,
-1 clove sliced garlic,
-1tbsp light soy sauce,
-1tbsp brown sugar,
-1tbsp Mirin or sherry,
-salt/pepper.
Bake 10 minutes. Leave aside until needed.
In a large wok, fry,
-1 carrot, chopped,
-1 onion, chopped,
-1 clove garlic chopped.
Cook, stirring, until the vegetables have softened, add
-2 whisked eggs,
Stir to cook the eggs, add
-150g sliced asparagus, add
-500g cooked rice, add
-cooking liquid from the salmon,
-1tbsp soy sauce.
Stir well to combine all the ingredients.
Spoon into a serving dish.
Top with flaked salmon.
I was lucky enough to try this recipe made with Ellie's fair hands and all I can say is it's amazing! My parents also enjoyed it and they are the fussy eaters. I love salmon and this is a great alternative to the plain old salmon I would normally cook. I would certainly recommend you give it a try!
