I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Pork with Spicy Herb and Lime Dip.



Pork with Spicy Herb and Lime Dip. หมูมะนาว.

If you are a fan of hot spicy Thai food this dish is a must. The dipping sauce is so fresh and full of aromatic goodness that it would cure many colds and flus. It's incredibly easy to make and because it's healthy you can eat plenty of it and still feel guilt free. It takes 15-20 minutes to put together.

         For the pork.
In a large bowl, put in
-500g pork fillet, slice into 1/2cm in thickness, with
-salt/pepper,
-1tbsp fish sauce,
-1tbsp soy sauce.
Stir to combine.
Leave aside until needed.

         For the stock pot.
In a large saucepan, add
-1 litre water, add
-2 stalks celery, cut into rough chunks,
-1 carrot, cut into rough chunks,
-1 onion, quartered.
Bring to the boil and leave to simmer, get on with the dip.

         Spicy lime dip.
In a food processor, put in
-4 cloves garlic,
-3cm roughly sliced ginger,
-3 shallots,
-a small bunch of coriander,
-chillies (I put in 15 but adjust according to your taste),
-1 stalk lemongrass, cut into chunks.
Pulse to combine.
Spoon into a bowl, add
-1/4 cup fish sauce,
-1/4 cup water,
-juice of 1 lime.
-2tsp of sugar.
Mix well to combine. Taste and adjust the seasoning, you should be able to taste, spicy, sweet and sour.

Use a slotted spoon to fish out the vegetables from the stock pot. Bring the stock up to the boil, add
-the marinaded pork (it's probably best to do this in 2 batches, use a slotted spoon to fish out the pork pieces).
The pork should take a minute or so to cook.

Serve with the dip and your choice of vegetables,
