I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

One Pan Salmon Fajitas.


One Pan Salmon Fajitas.

Fajitas are perfect for this time of year, they're filling but not stodgy. This is a lazy version but the taste is not compromised in anyway. A satisfying and delicious dinner but without a lot of washing up, quick but definitely not boring.

Serves 2-3.

Preparation:
2x250g salmon steaks, seasoned with salt and pepper.

    Vegetables.
2 cloves chopped garlic.
1 large sliced onion.
2 sliced peppers.
2 sliced tomatoes.
2 sliced chillies (adjust according to your taste)

   To serve.
Tortilla wraps.
Salad.

   Seasoning:
1tsp whole cumin.
2tsp paprika.
1tsp cayenne pepper (adjust according to your taste).
1tbsp onion granules.
1tsp dried garlic.
1tsp dried oregano.
Salt and pepper.
1tbsp balsamic vinegar.
1tbsp soy sauce.


In a large frying pan or a wok, add
-1tbsp olive oil, with
-salmon steaks.
Cook the fish to your liking.
Remove from the pan, then put in 
-the vegetables, with
-cumin seeds.
Cook, stirring occasionally, until the vegetables are almost cooked through, add
-the remaining seasoning.
Cook, stirring, for a couple of minutes or so.
Place the salmon in the pan to warm through.

Serve.
