I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Stir Fried Chicken with Basil.



Stir Fried Chicken with Basil.

Serves 4

Thailand's favourite dish. This is what we order when we can't decide what to eat.
Extremely spicy so it will almost always come with a crispy fried egg to soothe the palate.

Preparation:

-roughly pound fresh chillies (as hot as you dare) with 2 cloves of garlic.

-60g washed basil leaves.

In a wok, on high heat, fry
-garlic and chilli mixture until fragrant, add
-500g mince chicken,
Stir fry until the chicken is almost cooked through, add
-seasoning-soy sauce,
                    -fish sauce,
                    -oyster sauce,
                    -pinch of sugar,
                    -basil leaves.


Fry your egg  in plenty of oil so you are almost deep frying, the yolk should still be runny.
