I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Pulled Pork Sloppy Joe.



Pulled Pork Sloppy Joe.

Serves 6.

In a large casserole dish, fry
-1 large sliced onion, with,
-2 cloves chopped garlic, 
-4 rashes sliced bacon,
-3 bay leaves,
-parsley.
Cook, stirring until the onions are cooked through and slightly caramelised.Add
-1.5 kg pork, cut into 4cm chunks.
Cook, stirring to brown the meat pieces, add
-salt/pepper,
-1tsp paprika,
-1tsp cayenne pepper,
-2tbsp tomato purée,
-2x400g tinned tomatoes.
-1 litre chicken stock,
-500ml cider.
Stir to combine. Leave to simmer on low heat for around 2 1/2hrs.
You may need to add more liquid. The pork should be flaking when done.

Seasoning:
-soy sauce,
-brown sugar.
