I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Basic Waffles.



Basic Waffles.

Makes 10 (serves 5)
Super quick and easy.

Equipment:
Waffle maker.

Preparation:
In a saucepan or microwave, melt
-100g butter.

In a large bowl, put in,
-250g plain flour,
-2tsp baking powder,
-2tbsp caster sugar,
-1/2 tsp sea salt.
Mix well to combine. Add
-4 whisked eggs, 
-400ml milk,
-melted butter.
Whisk well to combine. Transfer into a jug.

Pour into the waffle machine. Cook for 5 minutes.
Repeat until all the batter has been used.

Serve with your choice of toppings.

                 Caramelised bananas.

In a frying pan, melt
-50g butter, add
-2 sliced bananas,
-1tbsp brown sugar. 
Cook to coat the banana pieces in the caramel sauce for around 2 minutes.
Fish out the bananas, add
-juice of 1/2 an orange to the pan. Stir to loosen the caramel.

Place a waffle on a serving place.
Spoon on the bananas.
Pour on the caramel sauce.

(Add ice cream or double cream if you happen to have some)
