I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Orange Fish Curry.



Orange Fish Curry.

Serves 4-6.

A southern Thai dish. The dish is incredibly spicy so it will almost always be eaten with an omelette to soothe the palate.

In a large saucepan, put in,
-1.5litre of water,
-2tbsp Orange curry paste,
-1tsp shrimp paste,
-1tsp turmeric powder,
Bring to the boil, add
-500g mixed vegetables(anything you have available), add
-500 white fish.
Leave to simmer until the fish and vegetables are cooked through.

To taste:
-fish sauce,
-sugar.

Serve with rice and a large Thai omelette.

             Omelette.

Put a large frying pan on high heat, add plenty of oil.
In a bowl, whisk
-4 eggs with
-2 cloves garlic,
-1 tsp fish sauce.
When the pan is at smoking point, add
-egg mixture.
It should almost be like deep frying. Turn the omelette once.
The omelette should become crispy.
