I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Chapatis.



Chapatis.

Makes 8.

In a large bowl, put in,
-400g plain flour, with
-1tsp salt.

In a jug put in,
-100ml lukewarm milk,
-100ml lukewarm water,
-2tbsp vegetable oil.

Add the wet  ingredients to the dry ingredients. Bring the mixture to a rough dough.
Knead the dough for around 10 minutes.
Divide into 8 balls. Leave, cover with a greased cling film for 15 minutes.

Put a frying pan on medium heat.
Roll each ball into a, roughly, 15cm disc.
Cook for around 30 seconds on each side.
Put on a platter, cover with tea towel.
Repeat until all the chapatis have been cooked.

Serve.
