I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Peanut Butter Brownies.


Peanut Butter Brownies.

Brownies are always popular and they are perfect for baking with children. My older daughter is a good baker and is not afraid to hob cook. My younger one prefers to crack eggs and is always telling us she is the best person for the job. We are always making chocolate brownies and are very proud of our newest recipe, the peanut butter version. This version is equally easy.

Equipment:
20x20cm square cake tin.

In a large saucepan, put in
-300g crunchy peanut butter, with
-80g butter,
-200g dark chocolate,
-1tsp vanilla bean paste,
-pinch of salt.
Cook, stirring on low heat until the chocolate and butter have melted.

Take off the heat, add
-300g caster sugar,  
Stir well to combine, add
-3 whisked eggs,
Stir well to combine, add
-150g plain flour,
-2tsp baking powder,
Stir well to combine.

Pour into the prepared tin.
Bake in 160c fan forced oven for 35 minutes.

Leave to cool in the cooking tin for 2 hours.
Cut into squares.
