I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Stir Fried Rice Noodles.


Stir Fried Rice Rice Noodles.

Going through my photo album and I can't believe there are still a few recipes that I have not yet posted! I must have cooked and EATEN more food than I thought, which seems impossible!

Serves 4.

Preparation:
300g dry rice noodles, cook, according to package instructions.
2 cloves chopped garlic.
1 onion cut into chunks.
Vegetables of your choice (sugar snap peas, broccoli, asparagus, carrots or mushrooms).
Dry roast 2tbsp peanuts with 4-5 dry chillies.

    Seasoning.
-2tbsp soy sauce.
-2tbsp oyster sauce.
-2tsp sesame oil.
-salt and pepper.

In a large wok, on high heat, with a tablespoon of vegetable oil, add 
-garlic,
-onions,
Cook, stirring constantly, until the vegetables have softened, add
-your choice of vegetables.
Cook, stirring occasionally, until the vegetables are almost cooked through, add
-cooked noodles,
-seasoning.
Stir well to combine, leave to cook for a minute or so, taste and adjust the seasoning.
Stir through roasted peanuts and chillies.
