I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Creamy Fish Pie.


Creamy Fish Pie.

Serves 6.

In a large saucepan, boil
-1.2kg potatoes.
Drain and mash with 50g butter.

In a frying pan, brown 
-250g cod loin,
-300g salmon steaks,
-600g smoked haddock (cut the fish into 8-10cm chunks)
Brown in small batches. The fish don't need to be cooked through.
Place in a large ovenproof dish.

In a large saucepan, fry
-500g chopped leeks, with
-1 sliced onions,
-1 stalk chopped celery,
-salt/pepper,
-a good pinch of paprika.
Cook, stirring until the vegetables are cooked through, add
-3tbsp plain flour, stir well, then add
-500ml milk,
-200ml double cream,
-2tbsp parsley.
Stir and leave to simmer for about 5 minutes or until the sauce has thickened.

Pour the sauce over the fish.
Top with mashed potatoes.
Sprinkle over some paprika.

Bake in 180c fan forced oven for about 45 minutes.
