I get asked quite often why I like to cook. The first reason I give is normally because I like to eat. I am Thai and food is a big factor in our culture. We greet each other with hello followed by 'have you eaten? When guests turn up at your house it's safe to assume that they will expect to be fed.

The second reason is that as I grew up in the Northeastern part of Thailand, the poorest region, food was always hard to come by. We weren't hungry as there was always rice, but it was difficult finding something to go with rice. Now I do have ingredients to go with rice, I want to cook!

Mediterranean Ham and Vegetable Stew.



Mediterranean Ham and Vegetable Stew.

A simple and easy recipe using leftover ham stock and ham chunks. This is especially good on a wet and rainy day. Hearty, filling, packed with healthy vegetables and delicious Mediterranean flavours. I am serving this homely and rustic stew with leftover pork toasts, a match made in leftover heaven.

Serves 3-4.

In a large saucepan, with a tablespoon of olive oil, fry
-2 cloves chopped garlic, with
-1 sliced red onion,
-1 sliced pepper,
-200g chopped carrots,
-300g chopped celery,
-1tsp fennel seeds,
-salt/pepper.
Cook, stirring occasionally until the vegetables have softened, add 
-300g ham chunks.
Stir well to combine, add
-1tbsp paprika,
-pinch of saffron,
-pinch of cayenne pepper.
Stir well to combine, add
-400g chopped tomatoes,
-2tbsp chopped parsley, 
-500ml ham stock.
Stir well and leave to simmer until the vegetables are cooked to your liking.
